Ingredients

1 pound ground beef
·
1 can (16 ounces) refried beans
·
1/2 cup finely chopped onion
· 3 cans tomato sauce
·
2 teaspoons chili powder
·
1 teaspoon minced garlic
·
1/2 teaspoon ground cumin
·
12 flour tortillas (10 inches), warmed.
·
1 can rotelle with green chili
·
1 can (4 ounces) chopped jalapeno peppers (optional)
·
Oil for deep-fat frying.
·
1-1/2 cups shredded cheddar cheese.
DIRECTIONS
1. Brown ground beef
2. Add onions, chili powder, garlic, cumin, salt, pepper
3. Add rotelle, tomato sauce
4. Heat tortillas
5. Layer warm tortillas on tin foil in deep pan
6. Spread layer of refried beans on tortillas
7. Put meat mixture in center of tortillas, add cheese
8. Fold one end and roll tortillas closed
9. Secure with toothpick
10. Place filled chimichanga in heated oil and fry until crispy on both sides
11. Pour the rest of the tomato sauce, the green chilis and the jalapeno peppers into a saucepan over medium
heat on the stove and heat the sauce until warm. Add salt and pepper to taste if needed.
12. Ladle the sauce over the finished chimichangas, top with shredded cheese and serve.
